Healthy Protein + Delicious Pancakes = Yes Please!
1 cup rolled oats (look for uncontaminated gluten free oats)
1 medium ripe banana
1 cup almond milk
1 tbsp coconut sugar
1 tsp baking powder
1/2 tsp cinnamon
2 tbsp Tropeaka Lean Protein Vanilla or Tropeaka Lean Protein Chocolate (can substitute for Tropeaka Pump Protein Chocolate)
Your favourite toppings e.g. fresh or frozen berries, figs, goji berries, crushed nuts, shredded coconut etc
1 Add all ingredients into a blender and blend until batter is smooth and lump-free.
2 Heat a frypan on low-medium heat. Grease with coconut oil or vegan butter if you're not using a non-stick pan.
3 Add 1/4 cup of the batter into the frypan to form each pancake.
4 Cook for 3-4 minutes or until rims of the pancakes become matte or bubbles appear before flipping and cooking for an additional 2-3 minutes.
5 Serve with toppings of choice!
