1 cup buckwheat flour
2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
3 medium or 4 small ripe bananas
1/3 cup rice malt syrup
3/4 cup almond milk, room temp

1 Preheat oven to 180*C (355 degrees Fahrenheit). Add bananas into a bowl and mash well. You can choose to leave a few chunkier bits if desired.
2 Pour in the rice malt syrup and almond milk and whisk together.
3 Add in the remaining dry ingredients and mix until you reach a smooth and thick batter.
4 Spoon into muffin moulds and bake for 25 minutes or until cooked through.
