1/4 cup coconut oil
1/4 cup maple syrup
1/2 cup brown sugar
1/2 tsp vanilla extract
3/4 cup almond meal
1/2 cup buckwheat flour
1 tsp baking soda
1/8 tsp sea salt
1/2 cup vegan choc chips or chopped up dark choc

1 Preheat the oven to 180°C. Combine the coconut oil, maple syrup, brown sugar and vanilla extract into a bowl. Whisk until well combined.
2 Add in the almond meal, buckwheat flour, cacao, baking soda and salt and mix until it forms a dough. Gently fold through the choc chips.
3 Separate the mixture into 6 even pieces and roll into balls. Place onto a lined baking tray and gently press each of them down using a fork.
4 Bake for 12 minutes. Remove from the oven and cool for 10-15 minutes. Enjoy! Store in an airtight container and keep at room temp for 5-7 days.
